Cloves are the dried buds of a tropical evergreen plant (Eugenia Caryophyllus).
Picked when turning from pale green to a pinkish red they are dried to a deep
rich brown.
Used in all types of cooking, both sweet and savoury, they feature in many
international spice mixtures from Chinese ‘Five Spice’ to ‘Garam Masala’ as
well as in traditional British cooking.
